The Ultimate Braai Broodjie

MAKES 4 BRAAI BROODJIES

Ingredients:

  • 8 Slices of fresh white or brown bread
  • Infoodz SA Chutney Sauce (be generous)
  • 2 Medium Red (Purple) Onions, very thinly sliced
  • 2-3 Large Tomatoes, sliced
  • 2 Cups Grated Mozzarella cheese (or a mix of Cheddar and Mozzarella for extra stretch)
  • Softened butter or margarine for the outside

Method:

  1. The Base: Butter one side of each slice of bread. Turn them over so the buttered side is facing down on your board.
  2. The Flavour: Spread a healthy layer of Infoodz SA Chutney Sauce on the unbuttered side of all 8 slices.
  3. The Layering: On 4 of the slices, layer your mozzarella, followed by the thin red onion rings and tomato slices. Season with a pinch of salt and pepper.
  4. The Close: Top with the remaining 4 slices (chutney side down, butter side up).
  5. The Braai: Place the broodjies into a folding grill (toeklap-rooster). Braai over very low coals, turning frequently. You want the bread to be golden and crispy while the cheese inside turns into a gooey masterpiece.

Side Suggestion: Creamy Jalapeño Mayo Potato Salad

A zesty, slightly spicy upgrade to the traditional “aartappelslaai.”

Ingredients:

  • 800g Baby potatoes, boiled until tender and halved
  • 4 Spring onions, chopped
  • 1/2 Red onion, finely diced
  • Infoodz Jalapeño Mayo Sauce
  • Fresh coriander or parsley for garnish

Method:

  1. While the potatoes are still slightly warm, toss them in a large bowl with the red onion and spring onion.
  2. Fold in enough Infoodz Jalapeño Mayo Sauce to coat the potatoes thoroughly. The warmth of the potatoes allows the jalapeño mayo to really soak in.
  3. Garnish with fresh herbs and serve alongside your hot Braai Broodjies.
